Here at ah-Beetz we feature Alberta made aged mozzarella, Grana padano cheese imported from Italy and our own fior di latte(fresh cow’s milk mozzarella) which is made in house daily with top quality locally produced milk from Birchwood Dairy. We also make most of our own charcuterie which includes the Italian sausage, smoked pancetta, capicola, chorizo and all beef pepperoni. Our dough is made with our special blend of Caputo 00 pizza flour from Italy and a BC milled bread flour. It is naturually leavened with a wild yeast culture (otherwise known as sourdough) and is charred in our oven which reaches 700 degrees. Organic products are used whenever possible and we are on a constant search for fresher and better quality ingredients. We will never stop trying to improve!
